Food trucks hit different. And after years of running Super Taco, we have some theories about why.

When you cook in a truck, there's nowhere to hide. No dim lighting, no fancy plating, no five-page menu to distract from a mediocre dish. Just the food, the cook, and you. That kind of honesty changes the way you cook — and the way it tastes.

We hand-press every tortilla because there's no faking a fresh tortilla in front of a customer who can literally watch you do it. Same with our salsas, our marinades, our slow-cooked carnitas. The truck keeps us honest.

It's a neighborhood thing

A restaurant waits for you to come to it. A food truck shows up where life is already happening — the farmers market, the festival, the brewery parking lot, the office park on a Tuesday. We meet you on your turf.

That's our story too. Super Taco started as a way to share the food we grew up eating — the food that meant home. Every dish on our menu has a memory behind it.
